Während in einigen Regionen Nahrung als Mittel zum Überleben gilt, hat sich in den hoch entwickelten Ländern ein Kult um das Thema Ernährung entwickelt. „Man IST was man ISST“. Sind Lebensmittel Ausdruck eines Lifestyles geworden? Wie können wir die Welt mit ernährungswissenschaftlich hochwertigen, erschwinglichen Lebensmitteln versorgen unter Berücksichtigung aller ökosoziologischen Aspekte, Ressourcenknappheit und CO2-Problematik? Die Industrie designt mit bestem technologischem und chemischem Wissen das perfekte Lebensmittel, dennoch wächst beim Konsumenten immer mehr der Wunsch nach natürlichem, gesundem Essen.
