06: From the lab to the plate – the vegan black pudding (Blunzengröstl)
There are 7.389 billion people in the world who need to be fed. Whereas in some regions food is just a means to survive, highly developed countries have fashioned a cult around nutrition. You ARE what you EAT. Has food become the expression of a lifestyle? How can we supply the world with nutritional, high-quality and affordable food while considering all the eco-sociological aspects, limited resources and CO2 emissions? Using state-of-the-art technological and chemical knowledge, industry is designing perfect foods, but there is a growing desire among consumers for natural, healthy food. How do we reconcile these developments?
